Cinco de Mayo is next week!  Do you celebrate it?  I think I’ve only been to a handful of Cinco de Mayo events in my life, but they were all fun.  (From what I can remember, that is!)

Smoothies are great, aren’t they?  You can tailor them to your nutritional needs and flavor cravings and still keep them super healthy.  Creative and good for you what’s not to love?! 

Another great thing about smoothies is their ability to restore us after a workout.  Our bodies require 30% or more of our daily calories to come from protein sources.  Finding protein sources can be especially challenging for vegetarians and even more so for vegans, so it’s nice to have items like smoothies to help get in that daily requirement!

Since I’m feeling homesick this week, I decided that the smoothie recipe I would create would be Cinco de Mayo inspired.  As I thought about how I could honor the flavors of Cinco de Mayo, I thought, “what’s more inspiring (and delicious) than the almighty churro?!”

I remember the first time I ever ate a churro.  It was at Bush Gardens Williamsburg, VA.  I think I actually may have referred to the churro as a “Twizzler donut” until I lived in Denver, and finally learned they are called churros.

I was like, whatever, I’m from New Hampshire.

Exactly.  So accurate.  

So, eating a churro is heavenly.  Churros are sugary, savory, and melt in your mouth.  However, churros are also deep fried and not so good after you’ve been killing it sweating you booty off all morning.  Don’t worry though; I came up with a way to get your churro fix, restore muscles, and stave off hunger for hours.

Embrace the flavor of Cinco de Mayo (without all the sugar) with this quick and healthy cocoa churro protein smoothie!
Ingredients
  • 1 cup of almond milk (or non-dairy option of your choice)
  • 1 scoop of vanilla protein powder
  • 1 T. of cocoa powder
  • ½ T. of ground cinnamon
  • ½ cup of spinach
  • 1 T. of rolled oats
Instructions
  1. Add your almond milk
  2. Add your powdered mixes
  3. Add your oats
  4. Add your spinach
  5. BLEND and DRINK!
Of course, you don’t have to drink yours out of a festive martini glass, but hey, I was just getting into the spirit of things!  I hope you’ll give this tasty little number a try over your Cinco de Mayo festivities (should you have them, or maybe now you have a good excuse)?

    Brilliant idea for a smoothie! Looks delicious. My favorite is pretty much any green protein smoothie. The taste and I love how good it is for my body.

      This smoothie is delish! I also love green smoothies too, Jill. There’s spinach in this one so it’s SORTA green! lol 😉

    I’m impressed that the spinach didn’t turn the whole thing green! I think I’m going to make this for my kids. They love it when I make them cinnamon toast, so maybe I’ll make them both and they’ll never know they ate spinach. Mwuahahaha.

      Hahaha yes, yes sneak the spinach into their unsuspecting bodies! I love stuffing spinach in my smoothies and baked goods, because it always makes me feel better. Why yes, a double chocolate cookie IS now a vegetable! 🙂

    I’m sorry you’re feeling homesick– come visit me in SoCal! This looks so good– since i was born and raised in Southern California, any Mexican food, drink or celebration is the ultimate comfort to me.

    You’ll have to excuse my ignorance Erin but I had no idea what Cinco de Mayo was! However I have now googled it and had a history lesson, lol! 😉

    I am TOTALLY aware of Churros though, yum yum yum! What you’ve done by creating a healthy smoothie with it, is fantastic!

      A history lesson AND a smoothie recipe — I aim high, Neil! LOL Churros are seriously the best. I’ve been thinking about them for the last week or so, and I’m going to have to cave and eat one soon! 😉
