Lately I’ve Been… #TOL

I love surveys.  Do you?  Emily at Sweets and Beets posted this survey the other day called, “Lately I’ve Been…” as a way to catch everybody up with what’s going on in her life right now.  I love reading other people’s answers, because let’s face it, we’re all a bit “blogging” voyeuristic.  Well, at least I am!

Also, it’s Thursday, and Amanda let’s us think out loud, so why not?



Making: connections and plans for building up my coaching business, Coached by Erin.  I’ve already picked up some personal training clients and hoping that the efforts I’m currently making will pay off in a big way!

Cooking:  Soups!  I know, I know it’s summer, but in Glasgow it really doesn’t feel anything like it.  I made a pretty kick ass mature cheddar and sweet potato soup the other day, if I may say so myself!

Drinking:  Water and gingerbread tea.  Like, bucket loads.  I’ve been trying to abstain from alcohol and coffee this month, and besides the weekend at my in-law’s and a glass of red wine Monday night, I’ve not been too bothered.


Yeah, so, I’m turning 35 next month.

Reading:  The Survivors Club by Ben Sherwood.  I’ve been reading this all month, because I have been having life ADHD.  It’s a great book though, and if you’ve ever wondered how you would handle an emergency life and death situation, then this is the book for you!

Wanting:  To have a gym somewhere in this city call me back about being a Spinning instructor.  My goal is to at least be a sub at a gym by the end of the summer!  #TotalWithdrawls

Wasting:  My youth.  There, I’ve said it.  I need to do something carefree.  Just, you know, not get deported.

Enjoying:  Training people again, running in the mornings with my hubby, anything and everything with chickpeas, and living in Scotland!


Liking:  Halt and Catch Fire — this show is REALLY good.  I also really like the song, “The Breach” by Dustin Tebbutt.  

Wondering: If I could become a vegan.  I think I may do one of those challenges, because after watching the documentary Vegucated I was in tears and wanting to never eat an animal product again!  Seriously, “Free Range” “Organic” and “Humane” are VERY subjective terms when it comes to the animal products we consume! Not to mention, our animal consumption is literally melting the atmosphere.  :/

Loving:  I will probably sound SUPER corny here (like, I don’t always?) — but I’m LOVING being married to a man who is as passionate about living a minimalist and healthy life with me.  It’s so freeing to share your life/space/goals/future with a person who wants the same things you do, eats the foods you cook, and gets up rain or shine to run with you.  #LOVE


Needing:   To call members of my family and mail them items that I’ve been buying for them.  And send something to my friend, Abby, who just had her baby early and could probably do with a nice baby gift while her son is still in the hospital.

Wearing:  Too much.  I wish it would be warm enough for a summer dress and open toe shoes.  It’s SO cold in Glasgow.  I’m used to hazy, warm New England/NYC summers, and the one I’m currently experiencing ain’t anything like that!

Noticing:  I need to read more, and get a tan.

Knowing:  You never know where you might end up in life, and that every time something bad happens — you can be sure that if you take that challenge and kick it’s ass, — better things will be on the horizon.

Thinking:  I would like to go back to school for nursing or speech pathology at some point, but also that I want to have a baby soon.

Feeling:  Very lucky and loved.

    I am envisaging you getting that call back about being a Spinning Instructor. And that’s it’s for the gym Lynne goes to where the Spinning Instructor failed to turn up on Monday!

    Ah, Scottish Summers. Remember those two days we had a couple of weeks ago. That might have been it. lol

      That soup was so good and so simple. I’m definitely going to put the recipe up. I love making simple veggie based soups!
      Which gym does Lynne take classes at? Is it Pure Gym? I keep hearing from people how understaffed gyms are for classes but you’d never know it!! I really miss leading classes, it’s the best!
      And yes, I remember those two days! I hope and pray that we will have more, but the next 5 days or sound like they’re going to suck! Ugh …I need a weekend in Spain or Italy, I think!! 🙂

    May I ask where you are in Glasgow? I stay right In the centre. I’d love to take a spin class of yours!
    I’m a member of Puregym – which I love – but I know you have to be a trainer/instructor there to teach classes.

      Hi Sarah! I’m actually STILL trying to find a gym to teach at. I haven’t found a place that is taking on new instructors yet. I live in the Southside. I am starting a much more aggressive search for a place to teach at though! Soon I hope! Do you like PureGym? I haven’t tried one yet. There’s so many gyms in Glasgow!

    Oh, I love all your answers! What makes you want to do nursing or speech pathology? I’m fascinated! What’s also more fascinating is how one can survive without coffee and alcohol. I could see abstaining from one or the other but both? I’d die. Ha ha!

      Awww thanks, girl! I wanted to get into speech pathology right after my bachelor’s degree in communication, because I was so fascinated by projects with people experiencing speech issues from strokes/injuries. I can be the most impatient person, but when it comes to people struggling, I have all the patience in the world. I started thinking I’d like to be a nurse while my dad was sick. I am so interested in health and I make people feel comfortable with my humor and personality. I’m hoping I will make a good mom. Luke is more baby crazy than me right now lol. Honestly, the coffee and alcohol were easy to limit, but I don’t have kids yet, so, I may have a bit of an advantage there. 😉

        Fascinating! My husband, my son and my stepson all stutter/stammer. My dad had a stroke and slurs. I wish I had taken nursing instead of kinesiology. If only I could go back in time! You’d make a fantastic nurse!

          Kinesiology is so fascinating though! I should have done nursing straight away, but I spent much of my teens and early 20’s being a hypochondriac so I would have self-medicated into an early grave if I’d had textbooks full of ailments in front of me for years! LOL. I think I could handle it far better now! Who knows, I’m still young 😉 Maybe I will pursue it!

      That makes me sad for you – this weather is depressing! I think we MIGHT actually have (some) sun on Saturday here, but probably about the same temperature and NJ. Thanks for taking pity on me, Morgan! 🙂

      Haha no way, Erin, your game is great! Your writing makes me feel like that. 🙂 I’ve been wanting to do this for two years, but now it just seems like the timing is perfect and I just need to go for it. Even if I fail, I will be happy I tried!! I really just want to help people live better lives, to me that would make my life even more amazing!

    Sounds like things are going pretty well for you! Very exciting that you are starting a coaching business! I’m sorry its so cold there…its been really hot here but I’m not complaining, I would take this any day over the winter weather.

      Thanks, Lisa! I know starting a business up is hard work, but it’s something I really want for myself! Everyone here has told me that this weather is uncharacteristic for this time of year so hopefully things improve 44 on the first day of summer is crayyyyzeee.

    I’d gladly send some warm weather your way if I could! I don’t do well in the heat, and it’s supposed to hit the 90’s here this weekend. Gulp. I think I’ll be sitting in the AC with a bucket of ice within arm’s reach. And I love your Tigger mug 😀 Never too old for Disney.

      I don’t like the extreme heat either, but I’d like even 70 degrees lol! The Tigger mug is actually my hubby’s — you’re right though — we’re never too old for Disney!!! 🙂

    Can you die of cuteness? This piggy picture was almost too much to bear.
    These kids vs. other goals thoughts are such a big thing. I ban all those thoughts as quickly as possible whenever they come up. They say there’s a time for everything but then I always think that for some things there is not a right time ever!

    That is not much of a summer!!! At least you are in a cool place?
    My hubby is also a good sport about eating whatever I cook and enjoys my “healthy” experiments. He probably enjoys the occasional sweet I make more, but he never says that out loud 🙂

      I love Glasgow, so far really the only thing I can’t acclimate to is the weather …which from what I have heard from other expats, I really won’t ever acclimate, I’ll just get on with it. So much cloudy and rainy weather. It’s nice to have health conscious partner, for sure …that’s not always been the case for me! Thanks for stopping by, Julie 🙂
