It (Was) National PB & J Day!

I think I mentioned in my last post that I tend to be a bit behind with things.  Well, apparently yesterday was National Peanut Butter and Jelly Day!  An entire day dedicated to the sweet, salty, savory sandwich.  I will be honest with you, I definitely had my fill of peanut butter and jelly sandwiches as a kid.  In fact, I think I officially begged my Dad to stop making me them in about the sixth grade. However, there is still something completely heartwarming and delicious about the combination, isn’t there?  I have mentioned before that I am a fan of juicing, smoothies, and all things drinkable (see my post ‘Aloe ‘Aloe) so it should come as no surprise that my favorite spin on a traditional PB & J is best done in drink form too!


1 1/2 C Vanilla (reduced sugar) Almond Milk

2 1/2 TBSP of Powdered Peanut Butter (My fave is PB2)

1 C Frozen Organic Strawberries

1 TBSP Chia Seeds


It’s like childhood in a glass!  It’s sweet, savory, and satisfying – not to mention full of protein, antioxidants, calcium, and fiber.   It also makes for a great post-workout snack.  Delicious and beneficial, now THERE’S a combination I never get sick of!
